Avocado, Mango and Black Bean Salad

A quick, easy and super simple vegan lunch with 4 out of your 5 a day in one bowl! Salads are a great way of bringing together lots of different ingredients and 'eating the rainbow' - the more colourful your bowl is, the more diverse range of nutrients you'll be receiving.  

INGREDIENTS 

1 tin black beans, drained and rinsed 

1 small mango, diced 

1 small avocado, diced

100g cherry tomatoes, halved 

1 chopped red onion 

A handful of coriander, chopped 

1 red chilli, deseeded and chopped (to taste) 

Zest and juice of 1 lime

METHOD

1. Place the mango, avocado, tomatoes, onion and chilli into a bowl, and pour over the lime zest and juice

2. Stir through the coriander and black beans
