Avocado Pasta

Avocados are great source of nutrients - they are high in vitamin C, B6 and Omega 3. This avocado sauce will take you the same time it takes for your pasta to boil, making it a quick, simple and healthy meal for either lunch or dinner. 

Serves 4


340g spaghetti (gluten free alternative) 

2 avocados 

A large handful of fresh basil 

2 garlic cloves 

2 tbsp fresh lemon juice 

1/3 cup of olive oil 

130g cherry tomatoes, halved 

1/2 tin of sweetcorn, drained 

Vegan parmesan 


1. Boil the pasta according to the instructions on the packet. 

2. To make the avocado sauce, blend the avocados, basil, garlic, lemon juice. Add salt and pepper to season. Whilst you are blending, slowly stream in the olive oil until emulsified. 

3. Mix together the pasta, sauce, cherry tomatoes and corn. 

4. Serve immediately. 

To serve, sprinkle with vegan parmesan cheese and fresh basil.
