Breakfast Quesadilla

This recipe is perfect for when you are craving a savoury and filling breakfast. Quesadillas are very versatile and you can customise them depending on what you like - veggies, tofu, vegan sausage, beans, salsa, guacamole! The options are endless and will keep you feeling full all morning. 

Makes 4. 

INGREDIENTS 

1 block extra firm tofu, cut into small bite-sized pieces

1/2 onion, diced

1 red pepper, diced 

1 green pepper, diced 

1/2 tsp turmeric

1/2 tsp garlic powder

1/2 tsp cumin powder

Salt and pepper 

Vegan cheese 

3-4 tortillas 

METHOD 

1. Heat oil in a large frying pan. Saute the onions and pepper until soft and lightly brown. Remove from pan and set aside. 

2. In the same pan, add more oil and stir in turmeric, garlic powder and cumin. Add the tofu and coat with the spices. Cook for 5-6 minutes until light browned. Season with salt and pepper. 

3. In a separate frying pan, place 1 tortilla in the pan and heat for 30 seconds. Flip the tortilla to assemble. Add cheese to half of the tortilla, then tofu, then onions and peppers and then more cheese. Fold over to close. 

4. Lightly press down the tortilla with a spatula. Cook for about 1 minute and flip. Cook on both sides until lightly browned and the cheese has melted. 

Cut in half to serve and add any other toppings that you'd like. Guacamole, pico de gallo, vegan sour cream or sliced avocado work very well!
