French Toast

French toast makes for the perfect brunch. By substituting eggs with chia seeds, this is a healthy and natural recipe but still gives you the flavours and textures of traditional French toast. 

Pick and choose your favourite fruit for the toppings - a great way to start your Saturday or Sunday mornings! 

INGREDIENTS 

4 - 5 slices of bread (make sure to use sturdy, rustic bread or it can turn out soggy/soft)

1 tbsp chia seeds 

1/2 tbsp maple syrup 

1/2 tsp ground cinnamon 

1/2 tsp vanilla extract 

235 ml non-dairy milk (I use almond but any will work)

Fresh fruit of your choice to serve 

METHOD 

1. Apart from the bread, mix all the ingredients in a bowl. Leave in the fridge for 10-20 minutes to activate. 

2. Preheat a griddle/ frying pan and grease with 1 tbsp vegan butter or coconut oil.

3. Dip each bread slice for around 30 seconds on each side, or until your bread is no longer dry. 

4. Place in the griddle pan and cook until golden brown on both sides. 

There are so many options you can do for toppings. I went with banana and blueberries with an extra drizzle of maple syrup. But you could also try fresh strawberries, raspberries or even warmed up frozen fruit to make a compote.
