HUMMUS AVOCADO RAW VEGGIE WRAP
I'm sure you've heard the phrase 'eat the rainbow' before, but its so important! The more colourful your meals are, the more diverse range of nutrients you're receiving. There is protein from the hummus, healthy fats from the avocado and a variety of other nutrients! This wrap is full of colourful veggies and is super tasty for a quick lunch.
1 large whole grain wrap
1 tbsp hummus
1/2 avocado, mashed or sliced
50g grated carrot
60g chopped cucumber
Large handful greens, spinach or kale
1 medium salad tomato, chopped
Salt & Pepper to taste
Hot sauce (optional)
1. Spread the hummus all over the wrap, then place the avocado down the middle - leaving two gaps at the top and bottom.
2. Add the carrot, cucumber, tomato, and greens onto of the avocado.
3. Add salt and pepper to taste, along with hot sauce if you wish. I like adding some Flying Goose siracha or siracha mayo, both accidentally vegan!
4. Fold wrap in on itself at the top and bottom of the fillings to keep everything in, then roll from one side into a wrap. Cut and serve with extra salad leaves if you wish.
Once made and before cutting, you could also toast the wrap for a few minutes each side to brown it.
