Super Flaky and Creamy Apple Pie

A super flaky crust and a juicy creamy apple filling come together to create the most delicious vegan apple pie, perfect for any time of your day, especially during these quiet cozy times at home. Enjoy it with a scoop of vegan vanilla ice cream for an extra treat!


For the Crust
2 cups all-purpose flour
1/2 cup whole-wheat flour
1 1/2 tbsp coconut sugar
3/4 tsp salt
1 cup coconut oil
5 tbsp ice water

For the Filling
4 peeled and thinly sliced apples
1/4 cup coconut sugar
1/4 cup light brown sugar
2 tbsp cornstarch
2 tbsp lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cardamom
1/4 tsp salt

For the Topping
unsweetened almond milk q.s.
light brown sugar q.s.
icing sugar


1) Prepare the crust: Pour the flour, sugar, and salt in a bowl, and mix. Then add the coconut oil at room temperature and use a fork to mix until sand-like consistency.

2) Add in the ice water, two tablespoons at the time until you manage to create a ball with your hands. Wrap the dough in plastic and place in the fridge for 30-40 min.

3) Meanwhile, combine all the ingredients for the filling in a bowl and set aside. Grease a round cake tin (mine is 26 cm) and preheat the oven on static mode to 200 ºC (400ºF).

4) Divide the dough in half. Roll out one half with the help of some flour (I used whole-wheat flour) and a rolling pin. Wrap dough around the rolling pin, then unwrap it into the cake tin and press it gently. Pour the filling inside.

5) Roll out the other half and cut it into 1.5 cm strips, creating a lattice. Press the strips into the bottom crust, if necessary cover the joints with more strips.

6) Brush the crust with some almond milk and sprinkle with the brown sugar. Place into the oven for 50 minutes, bake until the crust looks golden brown.

7) Cool completely before serving and dust with some icing sugar (optional).
