Sweet Jacket Potatoes with Curry Chickpeas

An exciting twist on the traditional hearty favourite, baked beans on a jacket potato.


1 large sweet potato
1 tbsp olive oil
1 brown onion
1 garlic clove, crushed
1/2 tsp ginger
1/2 tsp garam masala
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp turmeric
200g chopped tomatoes
200g chickpeas (cooked)


1) Heat oven to 200C/180C fan/gas 6. Push small holes into the sweet potato with a fork, and pop in the oven for 45 mins.
2) Heat the olive oil in a large saucepan over medium heat. Add the cumin and onion and fry until softened (approx 7 minutes).
3) Add the garlic and ginger into the pan, and cook for 2-3 mins. Add the spices and cook for a further 2 mins until fragrant, then add the tomatoes.
4) Once simmering, add the chickpeas and cook for a further 20 mins until thickened.
5) Take the sweet potatoes out of the oven and cut open. Then spoon over the marinated chickpeas.
6) To add some zest, squeeze over some lemon juice.
