  • Avocado and Bean Tacos

I love taco night! Tacos are such a versatile and fun option if you have friends over since everyone can get involved in assembling their own. This vegan recipe is quick, healthy and full of great nutrients from the beans and the fresh vegetables.

You can prep everything in advance and keep it in the fridge so you've got tasty meals throughout the week!

  • Full English Breakfast

A full English Breakfast is a staple in my household on a Sunday morning. This vegan take has all the flavours that we know and love from a traditional fry-up. The only real difference is using scrambled tofu as an alternative to scrambled eggs, but by adding seasoning and spices you can barely taste the difference!
  • Tofu and Vegetable Ramen

It is super simple to make ramen noodles using plant-based ingredients. By making a vegan broth infused with ginger, onion and shiitake mushrooms, you can re-create this tasty dish at home!

An easy, nutritious and delicious vegan dinner - perfect to make ahead of time and enjoy throughout the week.

  • Tofu Pad Thai

A stir-fry is perfect for an easy, quick and simple dinner. We find noodles work with almost anything - add all of your favourite vegetables or tofu for extra protein. Either way, stir-fries make for healthy and nutritious meals.
  • Vegetable Katsu Curry

This is one of my favourite dishes to order when I go out to eat - and now with this vegan recipe, I can re-create it at home!

Coating the vegetables with breadcrumbs makes them crunchy and crispy and when combined with rice and a curry sauce, it makes for a very tasty dinner.

  • French Toast

French toast makes for the perfect brunch. By substituting eggs with chia seeds, this is a healthy and natural recipe but still gives you the flavours and textures of traditional French toast.

Pick and choose your favourite fruit for the toppings - a great way to start your Saturday or Sunday mornings!

  • Roasted Vegetable Pasta

Roasting vegetables is an easy way to make your veggies taste even better!  And when they are combined with pasta, it makes for a super simple, healthy and nutritious lunch or dinner.
  • Gingerbread Waffles

Waffles for breakfast? This gingerbread recipe tastes great and is super healthy too! Spelt flour gives the waffles a lovely nutty flavour and packs them with fibre, protein, minerals and vitamins.

If you don't have a waffle iron, this recipe still works for making gingerbread pancakes too!
