The only real difference is using scrambled tofu as an alternative to scrambled eggs, but by adding seasoning and spices you can barely taste the difference!

    This is one of my favourite dishes to order when I go out to eat - and now with this vegan recipe, I can re-create it at home! 

    Coating the vegetables with breadcrumbs makes them crunchy and crispy and when combined with rice and a curry sauce, it makes for a very tasty dinner.

    The best thing about a curry is that it's so versatile. Sauces go well with almost anything - vegetables, tofu, lentils, chickpeas - making the simplest of ingredients tasty and flavoursome.
