
A super simple and quick vegan lunch with only 4 ingredients! Adding cannellini beans to a salad is a great way to make it more filling and to get an extra source of protein into your diet.
INGREDIENTS
2 tins of cannellini beans, washed and drained
100g watercress
250g packet of sun-dried tomatoes and olives (keep the oil for the dressing!)
Zest and juice of 1 lemon
METHOD
1. Combine the beans, watercress, tomatoes and olives (and the oil in the packet), and zest and juice of the lemon into a bowl
2. Mix together well and add salt and pepper to taste
