What is Aquafaba?

Aquafaba is the liquid that is found in the cans of pre-cooked chickpeas. It keeps the chickpeas preserved, but also has other uses, such as being a natural vegan egg-replacer. Aquafaba is known for its binding ability - attaining similar properties to egg whites.

The natural binder can be used to make delicious vegan treats, such as:

Cakes and muffins
Frosting and buttercream
To whip aquafaba, you can use an electric or handheld whisk. It takes around 5 minutes of whisking and the trick is to look out for when it begins to form stiff peaks, as egg whites would. To add sweetness, mix in some fine caster sugar.
